Guest Post: Easy Homemade Egg Drop Soup

It’s always nice to have a few simple recipes in your pocket for times of need. My family definitely hit ‘times of need’ this week while we’ve been fighting off this terrible stomach bug that’s going around. My step-mom dropped off groceries on my door step, complete with chicken broth to help heal our sickness. I normally make nutrient-rich bone broth out of a pastured chicken carcass, onions, garlic, carrots, celery, etc. Bone broth is an incredibly healing food, full of vitamins and minerals, which is why chicken soup is a well-known medicinal food for cold and flu season. But since we were in a jam, store-bought organic did the job!
Over the years, I’ve noticed that while recouping from sickness, I hit this point where my body really wants solid food, but I’m not well enough to stomach an actual meal; hence the chicken broth. Chicken broth is FULL of calcium which is excellent when you are sick and is essential for those of you who don’t consume dairy. This time, I got creative with my chicken broth and the results are quite tasty!
Egg Drop Soup (serving size: 2 cups– equivalent to 1 bowl of soup)
2 cups of chicken broth
1 egg (beaten)
A few sprigs of fresh parsley from my garden
This simple recipe only has 3 ingredients: chicken broth, egg, and fresh parsley. First, bring the chicken broth to a boil. While the broth is heating up, beat your egg with a fork. Once your broth has reached a roaring boil, slowly pour in egg, scrambling with fork as you are pouring. Return mixture to a steady boil. Sprinkle fresh parsley on top and stir thoroughly. Allow soup a few minutes to cool before attempting to eat. YUM!!! This is also a great way to add protein to your diet when you really don’t want to eat meat. 🙂
This would be super easy to make in large quantities for a family or a dinner party also. Happy souping!
